Choi Sum is probably the most popular vegetable in Hong Kong and also widely used in the western world. The flowering shoots and younger leaves of choy sum are used in salads or stir-fries. Try lightly boiling or steaming and adding to meat. It is rich in vitamin C, beta-carotene, fibre and many B vitamins. Surprisingly it can contribute a lot of calcium and iron too.

How to prepare
Choi Sum needs only brief cooking to wilt the leaves whilst keeping the stems firm but tender.
