Description
Cucumber (Lebanese) are very low in kilojoules. They contain some vitamin C, vitamin A and B6. Nutritionally, their value is in their trace elements: sodium, potassium, folacin. Traces of calcium, niacin, iron, zinc, manganese, silicon and sulfur are also present. They are popular in salads and juices or on a sandwich.
Lebanese cucumbers can be made into a cool summer soup. Why not try making your own Tzatziki sauce or create your own pickles? Maybe you could use a slice of cucumber as a substitute for a cracker biscuit on your next hors d’oeuvres platter.
Have you heard the old saying ‘cool as a cucumber’? There’s actually some truth to it. The high water content of the cucumber means that the centre can be up to 6 degrees cooler than the surrounding air. On a hot day, this makes cucumbers a great refresher!
Did you know?
Lebanese cucumbers have dark green skin and white flesh. They are relatively small at around 12-15 cm long. They have a tender skin which does not need to be peeled. They have a very sweet flavour, a very juicy texture and are nearly seedless.
