Potatoes (Kipfler) are long, narrow and have a cigar or finger-like shape. Their thin skin is light brown to dusty yellow with some shallow eyes. Its flesh is smooth and waxy with a golden yellow hue. They’re are a great source of complex carbohydrates. They also contain fibre, vitamin C, vitamin B6, potassium, thiamine, niacin, manganese and copper. From a nutritional perspective, the less you do to them, the better their nutritional value.
With their nutty taste, these potatoes are an excellent all round potato. They are great boiled, steamed, in salads or roasted.
How to store
Store in a dark cool environment. Keep them out of the fridge and out of sunlight if you can – this will help prevent sprouting and shrivelling. The back of a cupboard or the bottom of a pantry are ideal.
How to prepare
Preferably wash and peel or leave skin on and cut away any green spots. Kipflers can be left whole or sliced, chipped or grated depending on use.
