Potatoes (Chat 250g) or baby potatoes are ideal for steaming or boiling and are usually eaten whole with their skins on. You can also roast them or use them in a potato salad. They are low in kilojoules compared to other carbohydrate foods like rice or pasta. They’re high in fibre and are a good source of potassium and vitamin C. They also contain small amounts of iron, B vitamins and magnesium.
Once they’re cooked then cooled, a potato’s GI is lower than when they’re still hot!
